Artfarm, the group behind Mount St. Restaurant and The Audley Public House in London, is to launch a new venture in the Scottish Highlands.

Fish Shop will operate as a seafood restaurant-cum-fishmongers and will open on Saturday 29 April in the village of Ballater, just east of the Cairngorms National Park.

Described as being ‘modern and laid-back’, the restaurant will hold 40 covers and feature design elements created by Russell Sage Studio that centre on a ‘contemporary’ colour palette with highlights of natural wood, and black and antique bronze.

Managed by husband-and-wife team Marcus and Jasmine Sherry, operating as executive chef and general manager respectively, the Fish Shop menu will focus on shellfish and day boat fish, with the addition of select game, meat and vegetables from surrounding farms and estates.

Dishes will include partan bree soup made with velvet crab; Cape Wrath oysters; and barbecued whole plaice. Drinks, meanwhile, will focus on biodynamic and low carbon footprint wines chosen from British and European vineyards.

The adjoining fishmonger will offer seafood from the same boats and providers as the restaurant and will offer a selection of fish and shellfish alongside preserved seafood, Blackthorn sea salt, store cupboard essentials, seasonal vegetables, and wines.

It will also sell a range of freshly-prepared fish dishes to take home including fillet of Peterhead hake topped with an Invercauld Estate wild garlic crust; and a house-made fish pie.

Artfarm was founded in 2014 by Iwan and Manuela Wirth. Alongside The Fife Arms, Mount St. Restaurant and The Audley Public House, it also operates Roth Bar & Grill in Bruton, Somerset; Durslade Farmhouse and Durslade Farm Shop, also in Bruton; and The Fife Arms in Braemar, Scotland.

Last year the group also acquired The Groucho Club in London.
