The spiel? "Healthy eating based on salads made from the freshest, unadulterated ingredients."

Which means? Starting at the base price of £5, customers can create their own salads out of about 80 different seasonal ingredients from English farmers.

There are also ready-made salads made fresh every morning.

Who's behind it? Owners Eddie Holmes, former Head Chef for the Yo! Sushi group, and Jasper Wight, former management consultant turned gastropub owner.

Would like to fi nd? "A way to work more directly with the farmers.

We would also like to improve the consistency, because when you are working with fresh ingredients, it goes up and down."

Would suit? "Anyone. You can come in, grab a salad and go, or you can design your own. Our food is very clean and straightforward, but if you wanted a ‘fatboy'

Caesar salad, you could have it."

Ideal site? Holmes says they are in two of them already, one at Canary Wharf and one in Leadenhall market, which he says he loves because of its interaction with other shops in the market.

Future plans? "We are set to open two more this year, both in London, and next year we would like to consolidate and grow."

Why will this concept work? "A combination of things. Our food is quite inventive, and what we do is try to concentrate on doing a few things well. We do salads; we don't do wraps or sandwiches, and I would like to think we do a good job. The guys who work in our shops show huge commitment."
