The menus will be based around pub classics, Rawson’s own international travels, and his winning burgers from the two most recent ‘Slider Decider’ contests – the annual professional chef burger competition, which Rawson won in 2015 and 2016.
The weekend supperclubs will begin with the Portuguese-inspired ‘Taberna Portuguesa’, taking place on Saturday 3 December. This will be followed by a ‘Pub Grub’ menu for lunch and dinner on 11 December.
Each will cost £33 per person, with tickets available via Rawson’s page on the supperclub website, Grub Club.
Apart from the supperclubs, Rawson’s residency at the pub – which began on 21 November ‒ sees his menu available from Monday to Friday for lunch and dinner, with a range of sharing dishes and bar snacks on offer alongside larger plates.
Typical dishes include the pan con chicharron burger with aged beef and aji Amarillo ketchup; aubergine Zaalouk with crispy aubergine and smoked yoghurt, and nduja and rosemary Scotch egg.
As well as Pachamama, Rawson’s decade-long career has included time working with Nuno Mendes, Claude Bosi, and Gordon Ramsay.
The George & Dragon kitchen is headed up by Will Dennard, a former colleague of Rawson’s from London site The White Rabbit who has also worked at the East London Liquor Company.
