Anthony Demetre launches Bistrot at Wild Honey
Bistrot at Wild Honey will be adjacent to the chef’s Michelin-starred restaurant and will be a less formal, all-day option inspired by the ‘bistronomy’ movement in Europe over the past decade.
Dubbed Wild Honey’s ‘little sister’, Bistrot will serve a mostly French menu with some of Demetre’s all-time favourite dishes when it opens on 27 April.
Launch dishes on the seasonally-changing menu will include snacks such as cheese and ham croquettes; whipped cod’s roe and grilled flatbread; and a selection of French & British cheeses, while starters include Provençal sweet peppers, green sauce and chapelure; English asparagus with crushed poached egg, and vinaigrette; crisp Tamworth pig’s head served with mashed potato and sweet and sour onions; and a terrine of chicken, pork and duck ‘en croûte’.
Larger dishes will also feature, such as ricotta gnudi with parmesan velouté; Cornish skate, brown butter, parsley and lemon; whole young chicken lacquered with honey and preserved lemon; and steak frites with peppercorn sauce. There will also be a ‘plat du Jour’ – such as slow-cooked pork, ‘petit sale’ lentils, shallots and parsley.
The European-leaning wine list will feature more than 25 wines available by the bottle (from £29 for white, red and rosé) and 500ml carafe and wines will also be available by the glass with a Coravin.
Wild Honey St James was launched in spring 2019 by chef Demetre as a follow up to the restaurant of the same name that he opened with Will Smith in 2007. The restaurant was awarded a Michelin star in 2022.
