Located on Barton Street, the new brasserie, whose name pays homage to architect and previous resident John Wood Senior, will celebrate locally-grown and locally-sourced produce.
Opening in the spring, Emberwood is being led by general manager Shaun Bowles and has been created in partnership with restaurateur and managing director of Five Graces Hospitality Alex Ghalleb, whose most recent projects have included the opening of Julie’s in London’s Holland Park and Dorian in Notting Hill.
The kitchen will be headed up by executive head chef David Hazell with Sharky Patterson, previously of Soho House and The Beckford Arms, as restaurant general manager.
The menu will be inspired by the history and legacy of Bath, and will focus on ‘thoughtful, ingredient-driven dishes that highlight Somerset’s rich agricultural landscape’ with a commitment to local producers, seasonal cooking.
Dishes will be prepared in the restaurant’s open kitchen and on a charcoal-fired hearth in front of guests.
The hotel will also have a fully refurbished bar led by a team that include Zoe Burgess, the author of The Cocktail Cabinet and director of Atelier Pip.
