The restaurant’s new iteration, dubbed Singburi 2.0, will continue to be led by chef patron Sirichai Kularbwong, who has brought in friends and fellow hospitality professionals Nick Molyviatis and Alexander Gkikas to oversee the ‘much-anticipated rebirth’.
The restaurant will be located within Montacute Yards, a recently-launched development on Shoreditch High Street.
Molyviatis is best-known for his stint running the kitchen at highly-rated Soho Thai restaurant Kiln, which Restaurant named the best in the UK in 2018.
Singburi is currently ranked at number 71 on the National Restaurant Awards Top 100 list, where it is described as having ‘built a cult following for its bracingly authentic Thai cooking’.
Helmed by Kularbwong, alongside his parents, the Leytonstone restaurant started out life as a fish and chip shop some 25 years ago before evolving into a Thai canteen.
Kularbwong’s decision to relocate Singburi comes after his parents formally retired last year following an announcement in November that the restaurant was ‘going on sabbatical’.
At the time, Kularbwong said: “It’s been a lot of years watching mum wrap her spring rolls and helping dad make tod mun pla. It has been a lot [of] years of graft and commiserating, but we are in a position to fondly reminisce.
“But now, for the moment we need time to ruminate, as we have not had as much time for ourselves.”
Further details on the Shoreditch restaurant will be released closer to its launch, but the press notes say the ethos of Singburi 2.0 will ‘remain rooted in the spirit of the original while embracing a broader, distinctly London perspective’.
