Claridge’s Bakery will be located on Brook’s Mews in Mayfair and will celebrate the art of British baking. Hart will be executive baker and creative director and will create a menu that takes inspiration from his London upbringing and love and nostalgia for classic British bakeries, as well as Claridge’s own heritage.
Baked goods on offer will include sourdough breads, bloomers and granary loaves, as well as jam tarts and custard tarts, Belgian buns and iced fingers.
The opening marks a return to London for Hart and builds on his travels and work across the globe in places including San Francisco, Copenhagen and Mexico City.
Hart is the founder of Copenhagen-based bakery Hart Bageri, which he opened in partnership with René Redzepi of Noma. He was previously head baker at the renowned Tartine in San Francisco.
“My goal is to celebrate timeless British baked favourites in one of the most notable British institutions,” he says.
“Bread and baked goods are an everyday staple that brings people together and I can’t wait to share my take on it with Londoners and visitors to the capital”.
Originally from London, Hart currently lives in Mexico City, where he is opening his newest project Green Rhino.

“Introducing a brand-new space in the hotel that offers things to take home, as well as providing baked goods for the whole hotel, is a significant moment for Claridge’s”.
