Legado – meaning ‘legacy’ – is described as ‘a nod to Barragán’s personal journey and a celebration of Spain’s diverse regional food cultures’.
As with her first restaurant Sabor, which launched on Heddon Street in Mayfair in 2018 and won a Michelin star the same year, Legado will operate in partnership with JKS Restaurants.
“It has always been my greatest pleasure to cook food from my country, but there are still many more stories to tell about the dishes and flavours that I haven’t found outside of Spain,” says Barragán, discussing the new venture.
The menu at Legado will explore ingredients, dishes and dining traditions from across Spain, drawing inspiration from the lively tabanco bars of Cádiz and Jerez, the whole-animal cookery of Castilla y León’s asadors, the seafood restaurants along Galicia’s coastline, and the stews of Asturias.
“Legado is a kind of playground for me, and I am excited to share my memories and discoveries of food and drinks,” adds Barragán.
“I hope everyone will enjoy.”
Barragán has cooked in London for more than 20 years. She became sous chef at Fino when it opened in 2003 and was promoted to head chef four years later.
Subsequently, she took on the executive head chef role at Barrafina when it launched on Soho’s Frith Street in 2008.
She left Barrafina in 2017 ahead of the launch of Sabor the following year.
Sabor has been a regular fixture of the National Restaurant Awards Top 100 list since its launch and is currently ranked at number 25.
