The Club Hotel & Spa in Jersey has promoted Tom Earnshaw to the position of head chef of its Bohemia restaurant.

Earnshaw will join the island’s only Michelin-starred restaurant in June replacing Callum Graham, who has spent nine years at Bohemia, including five as the restaurant’s head chef, for a new role in the UK.

Earnshaw’s career has seen him work at four Michelin-starred restaurants including Moor Hall Restaurant, Northcote and The Samling hotels, before joining Bohemia as sous chef in 2023.

In his new role, he will oversee Bohemia’s kitchen and lead the development of the restaurant’s signature tasting and á la carte menus.

“I am honoured to be stepping up as head chef of Bohemia and overseeing the talented kitchen team,” he says.

“I am looking forward to introducing my new dishes and continuing to offer creative and memorable dining experiences for our guests, from Jersey and further afield.”

Commenting on his promotion, Lawrence Huggler, owner of Bohemia and The Club Hotel & Spa says: “We are thrilled to have Tom take the helm at Bohemia. I have known him for a number of years and have seen his passion, creativity and commitment first-hand.

“Having sampled his new menu, I am incredibly excited for the restaurant’s next chapter. I’d also like to thank Callum for his outstanding contribution and wish him every success in his new role in the UK.”

Earnshaw will take over at Bohemia on 8 June 2025.
