Nigel Sutcliffe and Barry Wagner join forces to reopen The Three Tuns pub in Henley

Nigel Sutcliffe, owner of The Oarsman in Marlow, has partnered with butcher Barry Wagner to reopen The Three Tuns pub in Henley.

Sutcliffe and Wagner, who owns Gabriel Machin butchers shop next door to the pub, will relaunch the venue on 27 May with a produce-led menu built around premium cuts and ingredients sourced directly from the butchers shop.

The pair first joked about taking over the pub next door 25 years ago while chatting over the butcher’s counter at Gabriel Machin. The Three Tuns will be run by the team behind The Oarsman, with executive Chef Scott Smith overseeing the kitchen and general manager Patrycja Gajda leading front of house.

Menu items will include bar bites like lamb croquettes; grilled sausages with n’duja and shallots; and Cantabrian anchovies on toast, while starters include the likes of devilled kidneys on toast; clams à la plancha; and Machin’s oak smoked salmon with potato salad.

Main dishes will range from confit lamb breast with carrot and black garlic and baked hake with brown shrimp and spring greens, to confit chicken chasseur pie for two. It will also serve a butcher’s board of a rotating selection of cuts from Gabriel Machin including lamb cutlets, bavette, steak frites, and côte du boeuf as well as celebratory cuts such as shoulder of lamb or wing rib of beef for the table.

In addition, the pub’s courtyard will be home to a more casual offshoot The Boat Shed serving a tight burger menu available to eat in or take away.

Sutcliffe, a former COO at The Fat Duck, reopened The Oarsman in 2021 with business partner James Mclean.
