The small restaurant, located in Kings Court, Kings Heath, will have space for just 12 covers and will serve Mexican-influenced small plates alongside a range of cocktails.
By day, Perro will deliver a ‘flavour-forward grab-and-go experience’ featuring stacked deli sandos, Vietnamese iced coffees, house-baked goods, and rotating seasonal agua fresca.
In the evening it will transform into an intimate, low-lit restaurant and bar with the food offer described as ‘serious, anchored in deep research and respect for the complexity of Mexican cuisine’.
“I fell in love with the depth of Mexican food,” says Wilden. “It’s one of the most misunderstood cuisines, and I’m nowhere near mastering it - but that’s the point.
“Perro will grow and evolve as we learn. We’re not doing ‘traditional’ Mexican, but every element we serve is rooted in research and reverence.”
On Friday and Saturday nights, Perro will stay open late serving snack alongside a cocktail selection devised by Katie Rouse, co-owner of West Midlands-based bar Couch and who was recently named Bartender of the Year.
Perro will also run a rotating calendar of creative events throughout the year.
“At its heart, Perro is about creative people supporting creative people,” adds Wilden. “Whether it’s food, music, fashion, or art – it will be a space to share, experiment, and celebrate.”
