The group has chosen Brighton and Bristol as the locations for its new restaurants, adding to its three existing regional sites in Cambridge, Manchester, and Leeds.
Set to open in the autumn the 115-cover two-floor restaurant in Brighton will be located on Ship Street in The Laines, a stone’s throw from the beach.
It will be followed in early 2026 by a 100-restaurant on Clare Street, in the medieval heart of Bristol’s Old City.
The menu at both restaurants will be led by the flat iron steak, a cut sourced from the feather blade alongside a rotating board of blackboard specials, including wagyu daily specials and a chilli cheeseburger, made using beef from the Flat Iron herd in Thirsk, Yorkshire.
Sides will include beef dripping chips, creamed spinach, truffled macaroni cheese and crispy bone marrow garlic mash.
The drinks menu will offer a selection of wines, including Flat Iron’s own Malbec, blended by the Flat Iron team from vineyards in the Limoux region in southern France’s Languedoc.
The new restaurants will take the group’s portfolio to 20 restaurants, with 15 in London and five outside of the capital.
