Chef Masayoshi Takayama to bring his three-star cooking to Mayfair

One of the most influential figures in modern Japanese cuisine will open a restaurant in Mayfair this September.

Chef Masayoshi ‘Masa’ Takayama, who is behind three Michelin-starred Masa in New York, will open Tobi Masa at The Chancery Rosewood in the autumn.

Located within the reimagined former US Embassy, the restaurant takes its name from the Japanese word ‘to fly’, drawing inspiration from the eagle perched atop the building. It will honour the same quality and traditions as the chef’s New York omakase restaurant and will feature dishes ‘that helped define a new era of sushi dining in New York’, according to PR details.

These will include the all-seafood surimi Masa pasta; Peking duck tacos, and Masa toro tartare – a blend of finely chopped fatty tuna topped with caviar.

The menu will also feature dishes created exclusively for the Mayfair restaurant, which will have a bar area and an omakase counter alongside the main dining room.

Takayama is widely regarded as the chef who redefined sushi in the US when he opened Masa in 2004. He is known for blending Eastern precision with Western luxury and his reverence for traditional Japanese techniques and seasonality. The Michelin Guide says of his New York restaurant: “Every decision, every move, is in the service of his distinctive style, which many have copied but none have mastered.”

“I’m so proud to be partnering with a creative and innovative brand like Rosewood,” says Takayama.

“We are very excited to embark on this new adventure together, and especially in such a historic landmark building in the middle of Mayfair.”

The restaurant will be Takayama’s second London venture following the opening of Sushi by Masa in department store Harrods in 2023.
