The restaurant, located in the village of Sønderhav in southern Jutland, was one of six restaurants in Denmark to be awarded a one-star distinction in the Michelin Guide Nordic Countries 2025 edition.
Named in honour of his pearl necklace wearing grandmother, who taught Proffitt to cook as a young boy, Pearl by Paul Proffitt is the chef’s debut restaurant and follows almost a decade of him working alongside fellow British chef Paul Cunningham at his two Michelin-starred restaurant Henne Kirkeby Kro in Denmark.
The restaurant was praised by the guide for its modern cuisine that ‘marries local produce and a little playful childhood nostalgia’.
Staffordshire-born Proffitt worked at restaurants including Purnbell’s in Birmingham and Swinfen Hall before moving to Denmark in 2015 to work at Henne Kirkeby Kro. During his time there the restaurant was awarded one Michelin Star in 2016 followed by a second a year later in 2017.
Speaking about the award, he says: “It’s a dream come true. Never in my wildest dreams did I think we would win a star after just 89 days of being open.”
