Crust Bros heads to Covent Garden for new flagship pizzeria

Crust Bros will launch its biggest restaurant to date in Covent Garden this summer.

The pizzeria, which operates two London sites in Waterloo and Earl’s Court, will open a two-storey venue on Bedford Street in the heart of the West End on 7 July.

With space for 135 covers, the new restaurant will serve Crust Brothers’ signature personalised Neapolitan style pizzas as well as a selection of new side dishes.

Customers will be able to choose between Crust Bros’ classic Neapolitan dough or gluten free and then from an assortment of sauce, meat, cheese, and vegetable options. They can also order from the Fave Pizzas menu of Naples-inspired classics and Crust Bros signatures including favourites Straight Outta Hell - made with tomato, mozzarella, chicken, chillies, pepperoni, nduja; Nonna’s Yard - tomato, mozzarella, caramelised onions, goat’s cheese, mushrooms, pesto drizzle; and Vegan Harlem Truffle of crema tartufata base, vegan mozzarella, mushrooms.

Crust Brothers has also created a savoury take on bombas - Italian enriched dough donuts - for the Covent Garden restaurant. These include the Lasagna Bomba (pictured above), made with six-hour ragu, parmesan, bechamel, and a deep fried lasagna sheet; the Nduja Bomba, made with ‘nduja mascarpone and dusted with ‘nduja sugar; and the Blue Cheese Bomba, featuring gorgonzola, béchemhal, and a parmesan twist.

Desserts will include a further selection of sweet bombas with either nutella, dolce de leche, or lemon zabaglioni as well as tiramisu and a selection of gelato in collaboration with Covent Garden based La Gelateria.

There will also be a cocktail menu that will include two takes on the Negroni - the Crust Bros Coffee Negroni made with gin, campari, red vermouth, Tia Maria, chocolate bitters, and an orange twist; and the Negroni Espresso Martini featuring gin, Campari, vermouth, Tia Maria, and coffee.

Crust Bros was founded in 2016 by Joe Moore, who quit his graduate scheme job to embark on a six-week tour of Italy. Following a successful street food business it opened its first bricks-and-mortar site in Waterloo in 2017, followed by a second location at Sambrook’s Brewery Tap in Wandsworth, which has since closed.

The Covent Garden restaurant marks a return to the expansion trail for the brand, which has previously operated now-closed sites in Boxpark’s Croydon and Shoreditch venues. The brand had also been looking at opening a site in Balham in 2021 but that never materialised.
