Maido in Lima, Peru, has been named the best in the world at The World’s 50 Best Restaurants Awards 2025.

Run by chef-owner Mitsuharu ‘Micha’ Tsumura, Maido, which ranked at number five on the 2024 list, specialises in Nikkei cuisine, blending Japanese techniques with Peruvian ingredients across a tasting menu that stretches across more than 10 courses.

The World’s 50 Best Restaurants describes the dining experience as ‘both culturally rich and innovatively modern’.

Maido is followed in the 2025 ranking by Asador Etxebarri in Atxondo, Spain, at number two, and Quintonil in Mexico City at number three.

Once again, just two UK restaurant have made the list: Santiago Lastra’s KOL in London’s Marylebone, and Jeremy Chan’s Ikoyi on The Strand.

The latter, however, received the Highest Climber Award, sponsored by Lee Kum Kee, rising from 42 on the 2024 list to 15 on this year’s list.

KOL, by contrast, slipped from number 17 to number 49.

The World’s 50 Best Restaurants 2025, sponsored by S.Pellegrino & Acqua Panna, were announced last night (19 June) at an awards ceremony hosted at Lingotto Fiere in Turin, Italy.

“Led by the brilliant Micha Tsumura, the team has demonstrated remarkable dedication, seamlessly incorporating Japanese techniques with traditional Peruvian ingredients to create dishes that captivate and surprise diners.”

This year’s list includes restaurants from 22 territories across five continents and 10 new entries.

“This year’s list celebrates culinary excellence across 22 territories, underscoring the growing global appreciation for diversity, creativity and excellence in hospitality,” Drew adds.

The winner of the 50 Best Restaurants Scholarship, in association with Parmigiano Reggiano, was also announced during the evening with Angélica Ortiz, an aspiring Colombian chef currently working at Oxomoco in New York, winning a place on the programme.

The World’s 50 Best Restaurants announced the return of its scholarship programme back in March after a five-year hiatus.

As the winning candidate, Ortiz will have the opportunity to stage at one of the world’s leading restaurants, El Celler de Can Roca in Girona, Spain, which was previously voted The World’s Best Restaurant in 2013 and 2015 and is now part of the Best of the Best hall of fame.

She will also spend time at SingleThread in Healdsburg, California, which is currently ranked at number 80 on The World’s 50 Best longlist, dividing her experience between kitchen and farm to receive a comprehensive education in sustainability and hyper-seasonal gastronomy.
