‘Lux-modern canteen’ concept Nomad to launch in Cardiff

A ‘lux-modern’ canteen specialising in hand-made pasta and chargrilled flatbreads is to launch in Cardiff later this month.

Nomad will open in the Welsh capital’s Castle Quarter and serve a monthly-changing menu that also encompasses seasonal small plates.

Chef Lali Souto, who previously cooked at Matsudai Ramen, Poca and Nook, will lead the kitchen, with Kim Barritt overseeing the floor and beverage programme.

Nomad is a friendly, energetic and flavour-first space - somewhere you can eat and drink as much or as little as you like,” says Souto, discussing the concept.

“Whether you’re in for a cocktail, a bowl of pasta, or just passing through, we want people to feel welcome whatever the occasion.

“We’re cooking food people come back for - whether it’s simple, shareable, or something unexpected.”

Dishes set to feature on the launch menu include white and brown crab Caesar with anchovy and bottarga; beef short ribs with hazelnut and horseradish; flatbread topped with Severn & Wye smoked salmon and horseradish; and strazopratti with pork and fennel sausage ragu and parmesan.

Drinks, meanwhile, will include a selection of wines by the glass and draught beers alongside ‘signature’ cocktails.

Nomad will open on Friday 27 June.
