The Manchester-founded Neapolitan pizza brand has made its South Coast debut with a restaurant in Brighton North Laine.

The top line: The latest restaurant from rapidly expanding Neapolitan pizza player Rudy’s. In Brighton’s North Laine area, Rudy’s Brighton has taken over the site that was once home to top Indian restaurant The Chilli Pickle which can now be found a few minutes walk to the south in The Lanes. Founded in Manchester’s trendy Ancoats in 2015 by Jim Morgan and Kate Wilson, Rudy’s is now owned by hospitality group Mission Mars. The Brighton launch takes the Rudy’s brand up to 35 locations.

On the menu: Rudy’s offers pizza made from fresh dough using Caputo ‘00’ flour that’s left to ferment for at least 24 hours and cooked in wood fire ovens for 60 seconds, in accordance with Neapolitan pizza tradition. Options include Salsiccia (smoked mozzarella, fennel sausage, caramelised red onions, chilli flakes); Romagnola (prosciutto, rocket, Grana Padano; and Tarantina (anchovies, caper, Kalamata olives, oregano). Prices range from £8.50 to £13.90. Supporting menu items include sharing boards of cheese and charcuterie; burrata and dips.

The vibe: The restaurant is huge, seating a total of 160 diners. Like the rest of the Rudy’s estate the feel is industrial and laid back with design details including a terrazzo-style floor, exposed ducting; a basic wooden bar; an eclectic mix of seating; and terracotta plant pots hanging from the ceiling.

And another thing: Rudy’s is named after its founder’s dog.
