The group, which is backed by £141m investment from Metric Capital Partners, currently operates 13 UK sites across London, Manchester, Birmingham, Reading and Chelmsford.
Its first Scottish restaurant is also on the way, as the business prepares to onboard new franchise partners and its first UK area developer.
“Franchising in the UK has always been a goal, but we first wanted to invest in our own sites and build operational insight,” says Emily Teh, CEO of Zambrero UK, speaking to MCA, Restaurant’s sister site.
“Now, with that first-hand experience and nearly 20 years of global franchising success, we’re ready to accelerate.”
Founded in Canberra, Australia, in 2005 by Dr Sam Prince, Zambrero has become the largest Mexican restaurant franchise in both Australia and Ireland, with more than 300 sites globally.
It entered the UK in 2021 with a corporate-led model to test the market and refine operations before scaling through partners.
The brand is actively seeking franchise partners, with or without hospitality experience.
“We’ve built a streamlined model with low complexity and strong support,” Teh continues.
“That means franchise partners can succeed whether they’re first-timers or multi-brand operators.”
Flexible formats will play a key role in expansion. While UK sites to date have focused on traditional high street and precinct locations, Zambrero globally operates in kiosks, shipping containers and drive-thrus.
Travel hubs and airports are also on the long-term radar.
“We’re format-flexible by design. Our kitchens don’t require complex cooking equipment, so we’re not restricted in the way other brands might be.”
Multi-channel capability is another strength.
“Our menu works across dine-in, takeaway, delivery, catering and off-site events. This gives our partners more ways to drive revenue while keeping operations simple.”
Zambrero’s ‘feel good Mex’ positioning includes its Plate 4 Plate initiative – a longstanding programme that donates a meal to someone in need for every burrito or bowl sold, via partner Rise Against Hunger.
The brand has now donated more than 93 million meals and expects to hit 100 million later this year.
“It brings added meaning to the work our teams do,” adds Teh.
“It’s something that really resonates with franchise partners, employees and customers alike.”
Zambrero UK has already signed up its first three franchise partners, who will open new sites within the next year, including its first in Scotland.
