First announced back in June, Caines will open Michael Caines at The Stafford on the restaurant site that previously housed The Game Bird.
It comes after the chef was named culinary strategist at The Stafford London, an appointment which saw Caines’s Devonshire-based hotel, restaurant and vineyard Lympstone Manor join the Stafford Collection as an associate member.
The new restaurant will be ‘reflective of Caines’s distinctive terroir cuisine’, according to the press notes, while’ paying homage to London’s vibrant and ever-evolving culinary scene’.
With an emphasis on produce from within the British Isles, the restaurant’s à la carte menu will feature signature options such as the Stafford beef wellington and Brixham dover sole.
Working with executive head Chef Simon Ulph, Caines has also developed a tasting menu featuring notable dishes such as warm lobster salad with cardamon vinaigrette; and pan-roasted Brixham turbot with shellfish chowder.
“This new restaurant is a celebration of British seasonal produce, and I can’t wait to share our vision with guests in the heart of St James’s,” says Caines.
“Together with Simon and the talented team at The Stafford London, we have been shaping the dining experience together over the past few months in readiness to welcome our guests this September.”
The collaboration between Caines and The Stafford London will also see the launch of a new City to Coast accommodation package where guests can enjoy a stay at both The Stafford London and Lympstone Manor.
