Robin Gill to celebrate aperitivo culture with his new Bar Brasso

Robin Gill will open a new coffee bar, deli and bakery by day and aperitivo bar by night beside his Darby’s restaurant in London’s Nine Elms.

Launching on 27 September, Bar Brasso will be inspired by the bar culture of San Sebastian and Venice.

Open from early morning, the cafe-deli will serve coffee and pastries, followed by Italian deli-style lunch favourites, before transforming in the evening into a low-lit, aperitivo bar serving seasonal snacks and small plates.

Menu items will include house bakes, salads and filled sandwiches alongside a rotating menu of hot lunch dishes and daily specials, such as beef shin lasagne; rosemary and garlic roast chicken with potato al forno; and ricotta and sage, brown butter gnudi.

On Tuesdays to Saturdays from 5-10pm, Bar Brasso will transition into an aperitivo bar that will serve a concise menu of snacks and small plates. Dish prices will range from £3-12, with larger plates under £20 and have been designed to be shared or paired with a drink at the bar. Highlights will include sage and anchovy fritters; devilled egg ‘piemontese’ crostini; mussels with nduja soffrito; and the Bourdain toastie - a grilled toastie of Franceschini Mortadella ‘Opera’ and fontina, inspired by the late, food writer’s favourite sandwich.

Desserts will include Campari and blood orange sorbetto; affogato; and a tiramisu.

The drinks program, meanwhile, will be rooted in aperitivo culture, with a Campari-forward list and a daily happy hour from 5-7pm featuring £5 Negronis and £6 spritzes. A concise selection of house cocktails, vermouths, digestivi, and wines by the glass, with a focus on northern Italy, will also feature.

The decor will take its cues from traditional bacari and pintxos bars, which feature wood panelling, tiled floors and long white marble counters for dining and drinking.
