Goodbye Horses team to open Stable Wines

The founders of Goodbye Horses and The Dreamery are opening a new wine shop in Islington this winter.

Alex Young and George de Vos will open Stable Wines just off the Essex Road in December.

Located in a building that was once a bank vault, Stable Wines will sell an ever-changing selection of natural, progressive bottles, each handpicked by wine director, Nathalie Nelles (Goodbye Horses/Ex-Noble Fine Liquor), and general manager, Fred Clelland (ex-P Franco/Tutto Wines).

Much of the space has been preserved, with the main vault’s original iron railings used to create Stable Wines’ own vault room, with octagonal sculptural shelves stacked with bottles.

The ground floor will operate as a bottle shop while a subterranean bar and dining space will have a private dining area that seats six as well as four candle-lit arches, each with its own banquette seating 10.

Alongside wine, Stable Wines will also offer a changing menu of cured meats and cheeses, designed to complement the expressive wine list. A rotating selection of small plates will be served, including Goodbye Horses’ signature cheese toastie.

“We’re drawn to the unexpected, things that surprise. This lost greenhouse off Essex Road, hiding a staircase to a labyrinthian cellar, is exactly that,” says Young.

Young and de Vos opened Goodbye Horses wine bar and restaurant in Hackney’s upmarket De Beauvoir area last summer. They also run a gelato shop The Dreamery opposite the venue.
