Opening in March 2026, Cooper’s Cut is described as a contemporary steakhouse and takes its named from Sir Edwin Cooper, the British architect behind the celebrated Port of London Authority building, which now houses the restaurant.
The 72-cover dining room will combine ‘forward-thinking cooking with relaxed refinement’ and ‘celebrate innovation in a heritage setting’, according to the marketing material.
Menu options will include a range of steaks, including a Galician cut (pictured).
La Dame de Pic, which was run by multi-Michelin starred French chef Anne-Sophie Pic, closed in February this year having operated at the hotel for eight years.
The restaurant held two Michelin stars until its closure.
