Coreus by Clare Smyth will be a seafood concept that will “celebrate the diversity of local seafood and bring lesser-known varieties to the forefront of the dining experience.”
“I am honoured to be opening Coreus at Waldorf Astoria London Admiralty Arch,” Smyth says.
“Coreus will be the epitome of a modern fine dining restaurant; relaxed, informal luxury. The name Coreus combines Core, meaning ‘heart’ in many languages, whilst Us, symbolises unity and connection. It reflects the passion and heart of everything we do, along with the collaboration between the team, guests and producers.”
The restaurant will also be home to Smyth’s Whiskey & Seaweed bar concept, offering a large selection of whisky alongside an extensive cocktail menu and wine list.
Café Boulud, meanwhile, will be positioned as a high-end all day dining restaurant offering breakfast and afternoon tea as well as lunch and dinner menus.
It will join two Café Boulud locations in the US as well as sites in Toronto, The Bahamas and Riyadh.
“I’m thrilled to be returning to London and bringing our Cafe Boulud dining experience to Waldorf Astoria London Admiralty Arch. I have worked around the world – from New York to Singapore – but London, to me, is one of the most exciting culinary cities in the world. I’m also delighted that we’ll be in such good company with Clare Smyth, for whom I have great admiration and have hosted in New York in the past. We can’t wait for guests to enjoy our all-day dining dishes on the rooftop of Admiralty Arch next year,” says Boulud.
It was announced in February that the pair – who hold seven Michelin stars between them - would be opening restaurants at the central London hotel, with the duo described as chef partners.
Owner Hilton described the collaboration as an ‘exciting step’ for the upcoming central London property ahead of its unveiling as a ‘world leading luxury hotel’.
For Smyth, the new venture will be her third London restaurant project joining her three-Michelin star flagship Core by Clare Smyth as well as her recently launched Chelsea restaurant Corenucopia.
The project marks a homecoming for largely US-based chef Daniel Boulud, who previously ran Bar Boulud at the Mandarin Oriental, Hyde Park, London between 2010 and 2020.
