The duo first announced plans to relocate to a then-undisclosed site in September, following the sale of their original home, Cathedral House.
The restaurant opened there in 2021 and quickly secured a Michelin Bib Gourmand.
The new restaurant will seat 60 covers across a single floor – almost double the capacity of the original site – with the Parkers also overseeing the hotel’s bar and lounge spaces.
Celentano’s will maintain chef Dean’s ingredient-led, minimal-waste approach, with a refreshed menu and new look.
He will continue his nose-to-tail philosophy, with dishes cooked over embers.
Signature plates, including the seasonally changing vegetable agnolotti and malted barley affogato, will return alongside new additions.
The drinks programme, led by Anna, will follow the same low-waste ethos, featuring seasonal cocktails using by-products from the kitchen.
Most liqueurs will be made in-house, including orange liqueur for margaritas, vermouth for the signature Celentano’s negroni, and a 0% vermouth for the NOgroni.
The wine list – including wines on tap – will focus on biodynamic and organic producers and will change seasonally to pair with the menu.
“This version of Celentano’s will feel more like us; what we would have envisaged our restaurant to be before we ever opened Celentano’s,” says Anna.
“Cathedral House was such a great opportunity for us, but there was a limit on how much we could do with the space. This time we are starting with a blank canvas and building a brand-new restaurant, working with unbelievably creative people who share our vision.”
The Cathedral House site will close at the end of this year.
Set to launch in April, Arthouse Glasgow will be the first opening from new hotel group Oberland, offering 76 en-suite bedrooms.
The hotel will occupy a 19th-century townhouse in central Glasgow, with interiors by A-nrd Studio.
The design will contrast the building’s historic architecture with stripped-back, neutral interiors, using a blend of vintage and contemporary furniture in keeping with the city’s artistic character.
