Trullo’s Conor Gadd is opening an Italian restaurant in Covent Garden

Conor Gadd, chef co-owner of Trullo in Highbury, will open an Italian restaurant in Covent Garden next year.

Named after the Italian word for butter, Burro will open its doors in Covent Garden’s Floral Court in early 2026 and will be Gadd’s first solo venture.

It will serve traditional Italian dishes that will include bruschetta of Venetian chicken livers; fried artichokes with bottarga and chilli; tagliatelle with duck and porcini ragu and a signature Roman fettucine ‘alfredo’.

Mains will include Dover sole with caviar; lobster ‘aqua pazza’; and vitello al burro with desserts to include tiramisu ‘bomboloni’ doughnuts; and almond cake with butter and a glass of marsala.

The space will feature a bar, restaurant, and all-season terrace designed by Lisa Helmanis at DAY Studio. The interiors are described as blending ‘part Irish country-house kitchen, part Italian fifties bistro,’ using warm woods and marble, designed to echo Gadd’s Irish heritage and approach to hospitality.

Gadd joined the Trullo team as head chef shortly after it opened in 2010 and in 2022 took over as managing director.
