The 11-strong London-based business, which counts Soho House founder Nick Jones and Deliveroo founder Will Shu as advisors and investors, will begin its European expansion with a site in Paris that will open in spring or summer this year.
The new site will open at 107 rue Réaumur in Paris’ Le Sentier district in the 2nd arrondissement.
Founded in 2021 by Florian de Chezelles and James Dare (pictured), The Salad Project has also welcomed Active Partners as investors.

“A huge thank you to our investor base who has accompanied and supported us since day one,” says de Chezelles. “Some guys invested when James D. and I were two 25-year olds with nothing more than an idea in the midst of a pandemic.
“Special mentions to Nick Jones and William [Shu] who continue to guide James and myself as advisors and investors on a daily basis.”
The Salad Project operates sites in the capital in areas including Spitalfields, Bank, Oxford Circus, Southwark, Victoria, and Battersea.
In October it opened its first matcha bar within its new Notting Hill site, which also marked its first residential venue.
The Salad Project picked up the Scalable Concept Award at Restaurant’s R200 Awards in 2024 and has said it has a target of reaching 20 sites by 2027.
