Individual Restaurants begins expansion of its Forbici pizzeria brand

A company promising to pioneer a ‘new wave of pizza in the UK’ will make its debut in Manchester this spring. Called Forbici, the pizza brand hails from Naples and says it will bring the formula for the ‘world’s most powerful pizza dough’ when it opens on the city’s Cross Street next month.

Individual Restaurants is beginning to expand its Neapolitan pizza brand Forbici with a second site due to open in Sheffield.

The group, which also operates the Piccolino, Restaurant Bar & Grill, and Riva Blu brands, has submitted plans to convert an office in St Paul’s Square in the south Yorkshire city into a restaurant.

The first Forbici opened in Manchester early last year, bringing what it says is the formula for the ‘world’s most powerful pizza dough’.

Meaning scissors in Italian, Forbici serve its Neapolitan pizzas with a pair of scissors with diners encouraged to use them to cut the pizzas into quarters and fold before eating, as is traditionally done in Naples.

Pizzas on its menu include Bufalina - made with San Marzano tomatoes, mozzarella di bufala and fresh basil, finished with parmesan; Spagnola - San Marzano tomatoes, fior di latte, chorizo, padron peppers and hot honey; and the white based Lancashire hot pot featuring fior di latte, lamb hot pot ragù and potato crisps.
