Owner The Evolv Collection has appointed Pierre Minotti as the restaurant’s executive chef in a bid to regain the restaurant a Michelin star.
Minotti has a strong Michelin pedigree having worked in a number of multi-Michelin starred establishments, most recently as executive chef at Alex Dilling at Hotel Café Royal, which holds two Michelin stars.
His CV also includes time a two-Michelin starred Hélène Darroze at The Connaught, where he was junior sous chef, at the three-starred Alain Ducasse at The Dorchester, where he was demi chef de partie, and at three-star restaurant Anne-Sophie Pic in Valence, where he was a commis chef.
“I’m incredibly excited to join The Evolv Collection and bring my vision to life at Orrery,” says Minotti.
“This is an opportunity to create something truly special, a fine dining restaurant with Michelin-star ambitions, but with a distinctly different atmosphere than traditional haute cuisine establishments.
“I want to create a place where people feel comfortable and relaxed while enjoying exceptional food prepared with the very best ingredients.”
His appointment is said to mark a new chapter at the restaurant, which is currently closed for a three-month refurbishment, with the intention to regain Orrery’s Michelin star, which it was awarded in 1999 but lost in 2008.
Minotti adds that the offer at his restaurant will be “more rustic, modern food in a space that feels alive and contemporary, not formal and stuffy”.
