Chicken with Rich Chestnut Mushroom, Wine and Tarragon Cream Sauce
Ingredients
75g Lakeland Dairies unsalted butter
20 boneless chicken thighs, skin on
100g onion, finely chopped
250g chestnut mushrooms, cleaned and quartered
200ml white wine (optional)
500g Millac Gold Double
500ml hot chicken stock
6g tarragon, picked and chopped
6g parsley, picked and chopped
Juice of half a lemon
Salt and black pepper
Method
1. Preheat oven to 200°C.
2. Melt half of the butter in a large sauté pan or frying pan. Season and seal the chicken, skin side down for 2-3 minutes until light golden brown, then turn and repeat on the other side. Remove from the pan and place on an oven tray. Roast until core temperatures exceeds 75°C.
3. In the same pan, fry the onions and mushrooms in the remaining butter until soft. Add the wine, if using, and bubble for 2 minutes until almost evaporated.
4. Add the Millac Gold Double and stock and bring to a simmer. Add the tarragon, parsley and lemon juice and season with salt and plenty of black pepper.
5. Spoon over the chicken and serve immediately with potatoes or rice.

Ingredients
10g chocolate powder
60ml espresso
30ml Millac Gold Double Whipping Cream
10g cheesecake sauce
Ice
50ml milk
50ml Millac Gold Double Whipping Cream
Matcha powder
Method
1. In a pitcher, combine the chocolate powder and espresso. Mix well until fully dissolved.
2. For the topping, froth 30ml Millac Gold Double Whipping Cream with the cheesecake sauce until smooth. Set aside.
3. Fill a serving glass with ice to the top. Pour in the milk and 50ml Millac Gold Double Whipping Cream into the serving glass.
4. Add the chocolate-espresso mixture. Top with the cheesecake whipped cream mixture.
5. Dust with matcha powder – use a stencil for a decorative finish.
