The Smokehouse is due to open on Folkestone’s harbour in early June, alongside Sargeant’s second venture Rocksalt, a separate but nearby family-orientated seafood restaurant with rooms.
But while Rocksalt is a one-off venture for the former Claridge’s chef, Smokehouse, says Sargeant, has the potential to succeed as a multisite operation.
Speaking with BigHospitality’s Becky Paskin on Folkestone harbour, Sargeant reveals how he plans to regenerate the area with food, drink and a waterside boutique hotel.
