Rosa's Thai Cafe head chef Saiphin Moore on how to cook authentic Thai food

Saiphin Moore, co-founder and head chef at London Thai group Rosa's Thai Cafe, shares her aubergine salad recipe and explains the most important elements of her home cuisine.

Thai-born Moore, who runs the seven-strong Rosa's Thai Cafe group with husband Alex, takes inspiration from her mother's cooking and has a background in cooking traditional Thai street food at markets. 

As the restaurant group continues to expand - with the most recent opening in London's Victoria in May this year - Moore showcases one of her most popular summer recipes, Aubergine Salad with prawns (Yum-Makuer-Yao), and explains the key principles of Thai cooking, including the importance of using great suppliers, authentic ingredients, and understanding the key tastes in this fresh and popular cuisine. 

Filmed at The School of Wok cookery school in London's Charing Cross, which is run by Hong-Kong born chef Jeremy Pang, this demonstration was part of a series of masterclasses on Thai food run by Moore herself to help spread knowledge of Thai food and cooking techniques. 

Moore has also started a new initiative to encourage aspiring cooks to ask questions, using the #AskSaiphin hashtag, via her own blog at the Rosa's Thai Cafe website. 

Rosa's Thai Cafe began as a street food stall in east London's Brick Lane in 2008, and now runs to seven permanent London sites - with the help of £1.8m in funding from bank Santander - including in Angel, Soho, Spitalfields, Westfield Stratford, Carnaby Street, and Chelsea.
