The Holborn basement restaurant, based on Hong Kong's all-day cafe diners of the 1950s and 1960s, opened on 8 August with the aim of offering a 'modern re-working of this East-meets-West cafe culture'.
TV chef and School of Wok creator Pang, whose parents grew up in Hong Kong before moving to the UK, talks through the restaurant style, its dishes and why his 'frustration' with Chinese cuisine in the UK led to him working on a brand new concept.
"We're really pushing the boat out to try and bring back our culture better than it's been portrayed here in the last 30 to 40-years," he says.
