Chefs' Secrets of Success: Josh Eggleton

In the second of a series of videos on tips for success, we spoke to Josh Eggleton, chef patron of the Michelin-starred Pony & Trap pub, and fish and chips restaurant Salt & Malt in Chew Magna, director of Yurt Lush Cafe, and regular BBC Great British Menu contestant. 

Along with his sister Holly, Josh Eggleton runs the Michelin-starred Pony & Trap, a 200-year-old pub near Bristol, with a strong emphasis on locally-sourced produce and a proud list of suppliers from across the neighbouring counties of Cornwall, Devon, Dorset, Somerset, Wiltshire and Gloucestershire. Having won its Michelin star in 2011, the pub has kept to this high standard ever since. 

Dishes focus on high-end pub favourites such as ham hock with leek, or snacks such as quail's scotch egg and steak tartare, plus bold cuts of meat and fresh fish, with original takes on classics such as sticky ale pudding, and caramel eclair. 

With a burgeoning media career including regular appearances on professional-level shows such as the BBC's Great British Menu, Eggleton's career has included work in the kitchens at Chanterelle in New York, and The French Laundry in California. 

We caught up with him at this year's Restaurant Show in London Olympia to ask him his secrets of success...
