A former Three Chimneys chef is to head up a new restaurant at an £8m development at the Swinton Estate in North Yorkshire.

Chris McPhee will oversee The Terrace restaurant at the new country club and spa when it launches at the 20,000 acre property this summer.

As well as working at The Three Chimneys on the Isle of Skye in his native Scotland, he has also cooked at the three AA rosette restaurants at Bovey Castle in Dartmoor and the Alexander House hotel in Sussex.

The Terrace will serve produce from the estate and its four-acre walled garden, with a mix of sharing boards, small plates, and meats cooked in a Josper oven.

New appointments

Also joining Swinton Park is Mehdi Amiri, who is taking over as head chef at the three AA rosette Samuel’s restaurant at the Swinton Park castle hotel.

Amiri has cooked at Restaurant Gordon Ramsay and a long list of hotel restaurants including Le Manoir aux Quat’Saisons and Wynyard Hall.

In his new role he will use venison, rabbit, trout and game from the estate to create new, modern dishes for the fine dining restaurant.

“It’s so exciting to be handed the reins of this iconic restaurant,” says Amiri. “We will be retaining its original spirit, but we will also be working to coax out fresh magic from all the local ingredients, showcasing their true brilliance in new and interesting ways.  Modern-thinking food – in a classic setting.”
