Gourmet fried chicken brand Butchies is to open its first bricks and mortar site in Shoreditch at the end of the month.

Founders Garrett and Emer FitzGerald have run a stall at London’s Broadway Market since 2014, and had a unit at Camden Stables Market from September 2016 until earlier this year.

Inspired by David Chang’s Fuku in New York, the new 45-cover restaurant will serve ‘higher welfare’ chicken using sustainable packaging and ingredients.

Butchie’s joins a growing number of gourmet fried chicken restaurants expanding in the capital.

CHIK’N, the fast food venture from the founders of Chick ‘n’ Sours, is on track to launch a second site after its sell-out debut this year, while its founders are also on the lookout for a third site for their Chick ‘n’ Sours brand.

Butchie’s new menu will offer six sandwiches priced from £6-£9.50, including The Original with house pickles and homemade garlic and fresh herb aioli; and the Cheesy Rider with hot pineapple reaper sauce and melted Red Leicester cheese.

Sides will include kimchi honey-butter wings, while a craft beer vending machine will dispense over 20 varieties.

“Packing in the desk job to start Butchies four years ago has been one of the best decisions I’ve ever made,” says Garrett.

“Bigger queues combined with selling out earlier and earlier each week at Broadway Market made us realise we were on to something really special. It’s been a wild ride and we are outrageously excited about this huge step. Having lived and worked in East London for the past 10 years, it is amazing to be giving our award winning fried chicken a permanent home in our own backyard.”

CODE Hospitality founder Adam Hyman is an investor in the business and helped fundraise for the new Shoreditch site. He will continue to work with Butchies going forward.

The restaurant will open on 27 November, and will be soft launching for the week prior.
