Tom Griffiths to launch Flank OG barbecue concept

Chef Tom Griffiths is to launch a third incarnation of his nose-to-tail cooking concept Flank, with a focus on ‘authentic American barbecue’.

Flank OG will form the foundations of the chef’s new residency at the 150-cover Print House Bar and Kitchen in Stratford, which is set to begin at the end of August.

“It’s going to be a completely different beast to what we’re doing with Flank in Market Halls and Spitalfields,” says Griffiths, who established the Flank brand with a series of pop-ups in Brighton, before moving the concept to London in 2017.

“We’ve seen so many great BBQ names in London and it’s such an exciting area that I wanted to double down on it for this new concept.”

The Flank OG menu will feature a mixture of small plates and sharing platters, with US barbecue staples including brisket and burnt ends featuring on the menu.

Signature dishes will include a whole duck, while side dishes will feature hispi cabbage grilled in beef fat, and a potato salad.

As with his Flank sites in Old Spitalfields Market and Market Halls, Griffiths says that he has made sure the quality of the meat remains high and prices affordable, with chicken wings to be priced at £1 each.

“It’s all about ensuring the product is full of flavour and affordable, as for me they’re the keys to the casual dining scene,” he says.

While no new details regarding the progress of Griffiths’ first permanent restaurant are available, the chef did confirm that he was also interested in expanding the Flank brand when the new Market Halls West End site, which is set to become the UK’s largest food hall, opens later this summer.

“We’re currently in the process of trying to see if we can get a spot [in the West End site], but competition is fierce,” he says.
