Three Michelin star chef Dani García to bring Bibo tapas restaurant to London Mondrian Shoreditch hotel

Andalusian chef Dani García is to bring his brasserie and a tapas bar concept Bibo to the capital, launching in the Mondrian Shoreditch hotel later this summer.

It will be the first London opening for García, who famously closed his eponymous restaurant in Marbella back in 2019 just 24 days after it was awarded three Michelin stars.

The chef founded Bibo in Marbella in 2014 with the idea to 'create a casual concept with which to democratise fine dining'.

Dishes set to feature on the tapas menu include Bibo 'favourites' such as the oxtail brioche with mushroom slices, DG sauce and rocket; the Russian salad with quail eggs comprising potato, extra virgin olive oil mayo, tuna belly, fried quail eggs and garlic chips; ham croquettes; and guacamole freshly made tableside in a molcajete mortar with avocado, green peas, broken-up burrata, mint and nachos.

The restaurant will hold 120 covers in total, including 20 on the Spanish courtyard and 12 in the private dining room, and subtly reference Andalusia in its design whilst complimenting the Bibo brand colours through the use of rose-coloured handmade tiles, Bordeaux red arched wall features, and limed oak joinery.

"It is an honour to open our first UK based restaurant," says García.

"We are excited to establish the property as the heart of the Shoreditch food scene.

"I have always been fascinated by the vibrant energy of London and look forward to seeing our most iconic dishes such as the oxtail brioche and creamy ham croquettes being enjoyed by this new public.”

García already operates four Bibo restaurants across Spain in Marbella, Madrid, Tarifa and Málaga, as well as a single site in Doha, Qatar.
