April Jackson to open Wood & Water at her Three Little Birds Brixton site

April Jackson is to open new restaurant Wood & Water on the site that was previously home to her Three Little Birds venue.

Located on Brixton’s Coldharbour Lane, the new restaurant takes its name from the origin of the word Jamaica – derived from the word xaymaca meaning ‘the land of wood and water’ and will serve ‘modern British food with Jamaican soul’.

Jackson, a former Miss Jamaica Universe and contestant on The Apprentice, will open the restaurant with her partner and operations manager Lee Tan.

The menu has been devised based on Jamaica-born Jackson’s travels and her time spent living in New York and France. Dishes on the launch menu will include pan seared duck breast with jerk glaze, roasted sweet potato purée, wilted greens, rum soaked plums, and toasted hazelnuts; potato croquettes, goat curry, and plantain ketchup; and roasted cauliflower, beetroot hummus, pomegranate, and tamarind sauce.

After a hard year, it is time to go back to the reason I started six years ago, which was to share my love for Jamaica through delicious food, rum cocktails and warm hospitality,” says Jackson.

“Brixton is still changing, and we are eager to change with it. I am excited to serve small plates that have familiar ingredients alongside some less familiar Jamaican elements, in a newly renovated space, with an interesting collection of rums and an energy that keeps you wanting more."

Jackson appeared on BBC’s The Apprentice​ in 2015 and has also appeared on Channel 4’s Sunday Brunch​ and BBC’s MasterChef. ​She opened Three Little Birds in Brixton in 2015 and later opened another restaurant in Clapham Junction on Battersea Rise.
