Dan McGeorge to open Vetch in Liverpool

Chef Dan McGeorge, winner of Great British Menu in 2021, will open his debut restaurant later this spring.

Vetch will be a 26-cover fine dining restaurant located on Liverpool's Hope Street and will serve modern British cooking 'interspersed with Nordic and Asian flavour' influences.

Operating over two floors the restaurant will occupy a period Georgian listed building when it opens next month.

Taking its name from a wild member of the pea family often found growing abundantly in hedgerows, meadows, and the edges of woodland, Vetch will serve a five-course lunch tasting menu three days a week (Thursday to Saturday priced at £85) and a seven-course dinner tasting menu four days (Wednesday to Saturday £105) with matched drinks pairings also available.

McGeorge studied for a law degree before deciding it wasn’t for him and trained to be a chef. On graduating from Liverpool Community College he worked in several high-profile kitchens, with stints alongside Simon Rimmer, Sam Moody at the one Michelin starred Bath Priory, and Ben Mounsey at Lawns Restaurant at Thornton Hall Hotel, before making the move to the Lakes in September 2017 as head chef at Rothay Manor.

He left Rothay Manor ​in October 2023 after six years and later relocated to his hometown of Liverpool to open Vetch with his partner Georgia.

"It was a big decision leaving Rothay, but it was the right one to make," he says.

"Georgia and I wanted to move back to Liverpool and realise our joint ambition to open a restaurant. We’ve been fortunate enough to find an amazing location right in the middle of the city at 29A Hope Street.

"We’re busy recruiting staff at the moment and then we’ll spend time working with our team to hit the ground running.

"Hopefully opening the doors in early May. We can’t wait to welcome guests through the door to enjoy what will hopefully be a great additional to Liverpool’s emerging dining scene.’’
