Chef Aaron Potter to launch debut restaurant
Set to open within Pimlico Road’s Newson’s Yard this autumn, Wildflowers will offer ‘elegant yet uncomplicated’ dishes paired with European wines in a ‘stylish and laid-back setting’.
Potter’s cooking CV includes a number of top restaurants overseas as well as London’s Trinity and Elystan Street, which both hold Michelin stars.
Dishes will include grilled sheep’s ricotta, fine beans and dandelion; mackerel and sardine bruschetta; cuttlefish fideua, grilled prawns and saffron aioli; and BBQ Herdwick lamb with Wildflower harissa and labneh.
Sweet options take in strawberries, Cava jelly, basil, Chantilly cream; and lemon thyme crema Catalana.
Above the main restaurant will be an intimate wine bar that will take inspiration from the cicchetti and pintxos bars of Italy and Spain, with a selection of vermouths, amaros and spritzes alongside a list of European wines.
Designed by Hart - who has a background in high-end interiors - Wildflowers will be a ‘bright, elegantly decorated space’.
“For us, restaurants are all about eating together, sharing great food with good company in a friendly and relaxed environment and that’s exactly what we want Wildflowers to be,” the pair say. “We’ve worked hard to build relationships with local suppliers to create a menu that is seasonally driven but always approachable, informed by fond memories of France, Italy and Spain.”
