Tom Brown to return to The Capital Hotel

Chef Tom Brown will open a 28-cover eponymous restaurant at Knightsbridge’s The Capital Hotel this Spring. It will be a homecoming of sorts for the Cornwall-born chef who headed the kitchen at the five-star hotel’s restaurant from 2016 to 2018 while an employee of Nathan Outlaw.

Chef Tom Brown will open a 28-cover eponymous restaurant at Knightsbridge’s The Capital Hotel this Spring.

It will be a homecoming of sorts for the Cornwall-born seafood specialist, who headed the kitchen at the five-star hotel’s restaurant from 2016 to 2018 while an employee of Nathan Outlaw.

As head chef, Brown retained Nathan Outlaw at The Capital’s Michelin star before striking out on his own to launch Cornerstone in Hackney Wick.

Launched in 2018, 36-cover fine dining restaurant Cornerstone won a Michelin star in 2021 but closed last summer with its chef citing the high running costs of a tasting menu restaurant and ‘changing tastes in diners’ preferences’.

At the time, Brown said his energy was ‘best directed’ toward his newest opening, Pearly Queen, the relaxed oyster and fish restaurant in Shoreditch, which opened in 2023.

Details of his new project are limited, but it appears to be pitched at a similar level to Cornerstone embodying ‘Brown’s signature style of clean, creative, and produce-driven cooking’ with a menu that features ‘bold, fearless dishes showcasing exceptional quality and innovative techniques’.

The restaurant will replace The Restaurant at the Capital, which is currently headed by Chris Prow and offers a ‘British and European fusion menu using the finest seasonal ingredients’.

Part of the Warwick Hotels and Resorts Group, The Capital Hotel has been home to some of the UK’s best-known chef’s including Gary Rhodes, Brian Turner, Paul Merrett and Eric Chavot.

While under the auspices of the latter - who took over as executive chef in 1999 - the restaurant at The Capital Hotel held two Michelin stars.

“Returning to The Capital Hotel feels like coming full circle,” Brown says. “This is where I developed my style and found the confidence to go onto open Cornerstone.

“It’s a privilege to have my name over the door of a restaurant where legends of my industry have worked, and I in turn hope to make my mark”.

The Capital Hotel general manager Solomon Khaddour added: “We are delighted to welcome Tom back to The Capital Hotel, bringing his extraordinary talent and culinary artistry back to Knightsbridge.

“His innovative approach to seafood will redefine the dining experience at our hotel, and this partnership is a celebration of both Tom’s incredible talent and the strengthened vision of The Capital Hotel.”
