Miller Prada to depart HUMO for new restaurant project

Miller Prada will depart Michelin-starred Mayfair restaurant HUMO at the end of the month as he looks to strike out on his own with a new restaurant project. The Colombian-born chef launched the St George Street restaurant for Creative Restaurant Group in 2023 having spent six years working alongside Endo Kazutoshi at his Japanese restaurant Endo at the Rotunda in West London.

Miller Prada will depart Michelin-starred Mayfair restaurant HUMO at the end of the month as he looks to strike out on his own with a new restaurant project.

The Colombian-born chef launched the St George Street restaurant for Creative Restaurant Group in 2023 having spent six years working alongside Endo Kazutoshi at his Japanese restaurant Endo at the Rotunda in West London.

Specialising in creative wood-fired cooking with Japanese and Latin American-influences, the restaurant won a Michelin star in 2024 and has featured on Restaurant’s list of the top 100 restaurants in the UK.

Prada told Restaurant that he is leaving to set up a new restaurant venture ‘in the near future’.

Humo will continue to develop its ‘unique gastronomical experience’ with current head chef Robbie Jameson leading the culinary programme.

The restaurant’s subterranean Colombian chef’s table concept Abajo will continue to be overseen by Morris Moreno, who is also from Columbia.

“Creating HUMO has been one of the most rewarding experiences of my life and I am grateful to everyone that supported and believed in me over the past four years,” Prada says.

“I was lucky enough to have been able to see my concept through and lead an incredibly talented team of young chefs and professionals. I couldn’t be prouder of what we achieved together and of the very special place that Humo has become. Can’t wait to see what the team will go on to do!”

Creative Restaurant Group chairman Misha Zelman added: “Opening Humo with chef Miller was an extraordinary culinary journey where we challenged the boundaries of using charcoal, grills, and unique produce to create a culinary masterpiece. I extend my best wishes to chef Miller as he embarks on his next culinary adventure.”

Creative Restaurant Group’s portfolio also includes Japanese restaurants Kioku by Endo, Sumi and Niju.
