Manchester’s Australasia to relaunch with open-flame cooking concept and new look

Manchester restaurant Australasia will close at the end of the month before reopening in April with a new menu and interior design.

In its new guise, the high-profile Spinningfields venue will retain its Pacific Rim theme but will focus on ingredients cooked over an open flame with all plates designed for sharing.

Lucie Sainerova - the former executive head chef of Novikov International and Raffles International - is leading the ‘transformation’ of the menu.

“Australasia has always been a special place and I’m excited to bring a fresh perspective to its next chapter. The new menu will celebrate the bold, vibrant flavours of the Pacific Rim, with a real focus on open-flame cooking,” she says.

“Guests can expect refined and creative plates, made for sharing and enjoy an atmosphere that’s as immersive as the food itself. We are preserving Australasia’s soul while giving it an entirely new body and spirit.”

The subterranean restaurant’s bar is also being renovated to become ‘a stand-alone destination once again’. The reimagined space will be focused on ‘innovative mixology’.

Known for its Louvre-like glass pyramid entrance, Australasia launched in 2011 and played a key role in establishing Spinningfields as a major destination for restaurants.
