Posting on Instagram, the chef apologised for his radio silence and said that the project had been “an amazing journey” but that he wished it “could have ended on a more positive note”.
Heritage is understood to have closed early this year after running into financial difficulties.
Gillan - who launched the Slaugham restaurant in 2019 following a successful crowdfunding campaign - said that he had created a new email for former suppliers and those that have vouchers for the restaurant.
“I tried to navigate our situation as best as I could but unfortunately the cost in doing so was a lot and not just the financial side,” the post reads.
“I know a lot of people have been trying to get in touch to discuss various subjects. Again my apologies. I’ve had no access to the emails, which has not helped iron out any confusion or frustration.
“There have been a huge number of loyal followers along this road and I know I have let many people down, over the last few months. I intend on making this right, however best I can.”
Mid last year the chef announced that Heritage would become an ‘events-led space’.
Originally from Hampshire, Gillan has a cooking CV that includes time with Daniel Clifford, Gordon Ramsay and John Campbell and won a Michelin star for his food at The Pass at South Lodge Hotel in 2011, holding the accolade for a further four years.
He has also appeared on Great British Menu, with his main course being chosen for the main banquet at the end of the show in series 10.
Prior to launching Heritage Gillan cooked at a number of restaurants in Brighton including Pike & Pine and Thai barbecue concept The Lucky Khao.
