New restaurant set for Hastings Contemporary art gallery

The duo behind St Leonards-on-Sea’s BAYTE will launch a modern European restaurant within the Hastings Contemporary art gallery early this month. Ruby Boglione and Silvy Pilkington say that Coquina will take its cues from ‘Spanish tapas bars and other bustling European eateries’. The duo behind St Leonards-on-Sea’s BAYTE will launch a modern European restaurant within the Hastings Contemporary art gallery early this month.

Ruby Boglione and Silvy Pilkington say that Coquina will take its cues from ‘Spanish tapas bars and other bustling European eateries’.

The kitchen will be led by Wil Hopson, whose CV includes Carousel, Kricket and Moro.

Most recently, he headed the kitchen at Tillingham winery in nearby Rye.

His menu will include classic potato tortilla; morcilla sausage with roasted apples, fresh pear and maple syrup; crispy lamb over hummus with pomegranate molasses; radicchio with Jerusalem artichoke, sheep’s cheese and cedrat; and South Coast dayboat fish with saffron Bomba rice.

The restaurant will be open for lunch from Wednesday to Sunday, and for dinner from Thursday to Saturday.

Teas, coffees and cakes will be served from the counter all day, Wednesday to Sunday,from 11am to 5pm.

“We’re so excited to open the doors to Coquina at Hastings Contemporary just as spring hits its stride at the glorious Hastings seafront,” says Boglione.

“Together with Wil, we’ve been hard at work creating a menu that draws from all our favourite places and recipes in the Mediterranean, combining bold flavours with the best produce we can get our hands on.”

Boglione and Pilkington launched BAYTE in 2023 in a former antiques shop as a modern European neighbourhood restaurant with an emphasis on local sourcing and quality produce.
