The Mission Mars-owed group has secured The Chilli Pickle’s former site beneath MyHotel, overlooking Jubilee Square.
A premises license has been granted that will allow the restaurant to trade daily between 11am and 11:30pm.
Rudy’s specialises in Neapolitan pizza made from fresh dough using Caputo ‘00’ flour that’s left to ferment for at least 24 hours and cooked in wood fire ovens for 60 seconds, in accordance with Neapolitan pizza tradition.
It launched in Ancoats, Manchester, in 2015 and initially concentrated its expansion in the north and northwest of the UK before making its London debut in Soho in 2021.
The group now operates 31 sites in total including several locations in the capital.
Rudy’s Brighton opening will also mark Mission Mars’s first site south of London.
The group also operates Alpine cook haus and Bavarian bier palace brand Albert’s Schloss, which has sites in Manchester, Birmingham, Liverpool and London, and its smaller offshoot concept Albert’s Schenke, which has a single location in Liverpool.
In January, Mission Mars reported year-on-year revenue rise 43% in the final quarter of 2024.
The group achieved total revenue of £31.6m for the three-month trading period ending 29th December 2024 with Rudy’s portfolio achieving 48% revenue growth over the period.
