Chef Collin Brown to oversee relaunch of Islington’s Laki Kane

Rum-focused cocktail bar Laki Kane will relaunch in Islington next month, introducing a new food menu curated by high-profile Caribbean chef Collin Brown.

Brown, known for his work with Sandals Resorts and appearances across global food media, has cooked for A-list celebrities including Beyoncé, Vin Diesel, and Katy Perry.

New dishes will include pina colada prawns (coconut-crusted shrimp with sweet pineapple and coconut rundown); pulled beef and plantain stack (layered slow-cooked beef with rum bone marrow gravy), and laki donuts tossed in fragrant spiced sugar and served with rich caramel sauce.

The relaunch will also unveil refreshed interiors, described as “designed to elevate the tropical escape theme,” alongside a continued focus on immersive experiences such as bottomless brunch, live entertainment, DJ-led events, and cocktail masterclasses.

According to the company, the repositioning aims to “target both London nightlife lovers and casual diners seeking escapism.”

Co-founder Georgi Radev says the Upper Street venue, originally launched in 2018, will remain cocktail- and music-led:
