Tell us about the moment you first became interested in wine

When I was studying at Copenhagen Hospitality College in the early 2000s, I very much missed academic challenges and found those in wine studies, despite not at all being interested in consuming wine at the time. Around the same time, I was fortunate to work alongside a few really inspiring sommeliers.

Extensive, eclectic, international, well-priced, and with an enormous and dynamic by-the-glass selection.

Name your top three restaurant wine lists

Geranium and Grimal in Copenhagen, and The Ritz in London.

Who do you most respect in the wine world?

My husband (fellow Master Sommelier Clément Robert).

What’s the most interesting wine you’ve come across recently?

Ken Forrester’s FMC 2004 from magnum – great freshness, succulent texture, and depth of fruit. An incredibly well-aged wine.

What are the three most overused tasting notes?

Balanced, approachable, and mineral.

What’s the best value wine on your list at the moment?

We have a 2022 Jasnières Les Rosiers from Domaine de Bellivière (in the Loire Valley) on the list at £55. It’s a high-quality Chenin with substantial fruit concentration, a saline and tense texture, and very good ageing capacity. Overall, it’s a treat for the price.

What is your ultimate food and drink match?

Lobster and Champagne. Ideally with mayonnaise, fries, and Egly-Ouriet VP.

Old World or New World?

Old World.

What is your pet hate when it comes to wine service in other restaurants?

Serving wine by the glass that is not in top-notch condition — for example, flat Champagne or oxidised white or red wine. Also, wine not being served at the right temperature.

Who is your favourite producer right now (and why)?

Harlan Estate. Great philosophy, culture, fabulous wines. I was lucky enough to visit them last year — what an experience.

How did you become interested in wine?

Which wine-producing region or country is underrated at the moment?

Bordeaux — an established region that is having a tough time at the moment. They make great wines with great ageing potential, and there is value to be had at almost all price points.

It’s your last meal and you can have a bottle of any wine in the world. What is it and why?

Krug Vintage 2004 followed by Ridge Monte Bello 1992.
