TRUST by Modou will feature an ‘ever-changing’ tasting menu experience centred on seasonality and ‘bold flavours’.
The five-course tasting menu, which will be priced at £30 per person, will feature no previews or dish descriptions with the idea that diners put their trust in Diagne and his team.
“This is the restaurant I’ve always dreamed of,” says Diagne.
“TRUST is about more than just great food — it’s about connection, surprise, and giving people a reason to come back not just for a dish, but for a feeling.
“I want people to walk through the door, let go of control, and simply enjoy what we’ve cooked and prepared for them in that moment.”
TRUST by Modou will operate alongside the eponymous chef’s original restaurant, 111 by Modou.
Born in Senegal, Diagne was originally hired as a kitchen porter at Scottish-born chef Nico Simeone’s 111 by Nico restaurant.
Following years of training under Simeone, Diagne rose through the ranks of the restaurant to head chef before taking over as chef patron in 2020 and changing the name to 111 by Modou.
Simeone, who is behind the nationwide Six by Nico restaurant brand, is understood to be a partner in TRUST by Modou, which takes over the space that was once the site for the first Six by Nico restaurant and more recently occupied the chef’s short lived, speakeasy-style fish concept Sole Club.
In January this year it was announced that Simeone had partnered with Fiegel, an Australian-Italian chef who grew up in Sydney to launch Extra_Ordinary, which was billed as an all-day restaurant with a contemporary Asian aesthetic influenced by cities including Tokyo, Seoul and Hong Kong.
However, the restaurant closed quietly after just a few months trading, leading to Diagne taking over the site.
TRUST by Modou will open early July 2025.
